Resep Martabak Kentang Palembang (Palembang Style Potato Martabak)
Martabak Kentang ini sangat enak, dengan bumbu kari yang harum, membuat camilan ini benar-benar menggugah selera. Belum lagi tambahan cuko khas Palembang yang rasanya manis, asam, dan pedas berpadu sempurna. Buat yuk!

Bahan-bahan martabak kentang:
- Kulit lumpia secukupnya
- 150 gr kentang
- 2 batang bawang daun
- 1/2 buah bawang bombai
- 2 butir telur
- 1/2 sdt bubuk kari
- 1 sdt garam
- 1/4 sdt merica bubuk
Bahan kuah cuko:
- 3 siung bawang putih, haluskan
- 10 buah cabe rawit (sesuai selera), haluskan
- 400 ml air
- 125 gr gula aren
- 2 sdt pasta asam jawa
- 1 sdt garam
Baham pelengkap kuah cuko:
- 1/2 buah bawang bombai, iris
- 1 buah tomat, iris
- 5 buah cabe rawit, iris
- Bersihkan kentang, kemudian potong dadu, rebus hingga matang, tiriskan.
- Siapkan bahan isian. Iris bawang daun, dan cincang bawang bombai. Campurkan bersama kentang, telur, dan bumbu-bumbu. Aduk rata.
- Siapkan bungkus lumpia, masukan secukupnya bahan isian, lipat lumpia sedemikian rupa agar isinya tidak keluar saat digoreng.
- Panaskan minyak, dan goreng kentang hingga matang kecoklatan, tiriskan.
- Siapkan bahan kuah cuko, haluskan bawang putih dan cabe rawit. Kemudian suapkan panci masukan air, bumbu yang sudah dihaluskan tadi, asam jawa, dan gula. Aduk hingga gula larut dan mengental.
- Sajikan martabak bersama kuah cuko yang sudah diberi potongan tomat, cabe rawit, dan irisan bawang bombai

Potato martabak ingredients:
- spring roll skin
- 150 grams of potatoes
- 2 stalks of spring onions
- 1/2 onion
- 2 eggs
- 1/2 teaspoon curry powder
- 1 teaspoon salt
- 1/4 teaspoon pepper powder
Cuko sauce ingredients:
- 3 cloves of garlic, puree
- 10 cayenne peppers (to taste), puree
- 400 ml water
- 125 grams of palm sugar
- 2 teaspoons of tamarind paste
- 1 teaspoon salt
- Cuko sauce complementary ingredients:
- 1/2 onion, sliced
- 1 tomato, sliced
- 5 cayenne peppers, sliced
How to make:
- Clean the potatoes, then cut into cubes, boil until cooked, drain. Prepare the filling ingredients. Slice the spring onions, and chop the onions. Mix with the potatoes, eggs, and spices. Mix well.
- Prepare the spring roll wrappers, add enough filling ingredients, fold the spring rolls so that the filling does not come out when fried.
- Heat the oil, and fry the martabak until they are browned, drain.
- Prepare the cuko sauce ingredients, puree the garlic and cayenne pepper. Then, put the water, the previously pureed spices, tamarind, and sugar in a pan. Stir until the sugar dissolves and thickens.
- Serve the martabak with cuko sauce topped with chopped tomatoes, cayenne pepper, and sliced onions.
