Bahan-bahan ayam rica-rica:

  • 500 gr ayam
  • 3 buah cabe merah besar
  • 5 buah cabe merah keriting
  • 5 buah cabe rawit merah
  • 5 siung bawang merah
  • 2 siung bawang putih
  • 3 ruas kunyit
  • 4 butir kemiri
  • 1/2 sdt ketumbar bubuk
  • 1/2 sdt merica bubuk
  • 50 gr daun kemangi
  • 2 lembar daun jeruk
  • 3 ruas lengkuas, geprek
  • 3 ruas jahe, geprek
  • 1 batang serai, geprek
  • 2 lembar daun salam
  • 1/2 sdt garam
  • 1/2 sdt kaldu bubuk ayam
  • 1/2 sdt gula pasir
  • 400 ml air
  • 5 sdm minyak goreng
Cara membuat ayam rica-rica:
  • Cuci bersih ayam, kemudian kucuri perasan lemon jika diperlukan, sisihkan.
  • Haluskan bawang merah, bawang putih, cabe merah besar, cabe merah keriting, cabe rawit merah, kunyit, kemiri, ketumbar, dan merica hingga halus.
  • Panaskan minyak, kemudian tumis bumbu halus dan sisa bumbu lainnya hingga harum.
  • Masukan ayam, tumis hingga berubah warna, kemudian masukan air. Aduk rata dan tambahkan garam, gula, dan kaldu bubuk.
  • Masak ayam hingga bumbu meresap dan air menyusut, kemudian masukan daun kemangi, aduk hingga daun layu.

Rica-rica chicken ingredients:
  • 500 gr chicken
  • 3 large red chilies
  • 5 curly red chilies
  • 5 red cayenne peppers
  • 5 cloves of red onion
  • 2 cloves of garlic
  • 3 turmeric segments
  • 4 candlenuts
  • 1/2 tsp coriander powder
  • 1/2 tsp ground pepper
  • 50 gr basil leaves
  • 2 lime leaves
  • 3 galangal segments, crushed
  • 3 pieces of ginger, crushed
  • 1 stalk lemongrass, crushed
  • 2 bay leaves
  • 1/2 tsp salt
  • 1/2 tsp chicken stock powder
  • 1/2 tsp granulated sugar
  • 400 ml water
  • 5 tbsp cooking oil
How to make rica-rica chicken:
  • Prepare the chicken, then squeeze lemon juice if needed, set aside.
  • Puree the shallots, garlic, large red chilies, curly red chilies, red cayenne peppers, turmeric, candlenuts, coriander and pepper until smooth.
  • Heat the oil, then saute the ground spices and remaining spices until fragrant.
  • Add the chicken, stir-fry until the color changes, then add the water. Stir well and add salt, sugar and stock powder.
  • Cook the chicken until the spices are absorbed and the water is reduced, then add the basil leaves, stir until the leaves wilt.
