Empal Daging Serundeng (Shredded Beef with Grated Coconut)

Bahan-bahan empal daging kelapa:
- 400 gr daging bagian top side, rebus, suwir-suwir
- 2 lembar daun salam
- 2 batang serai, dimemarkan
- 150 gr kelapa parut
- 350 ml air kelapa
- 2 sdm kecap manis
- 1/2 sdt garam
- 1/4 sdt merica bubuk
- 1 sdm gula merah
- 1 sdt kaldu sapi bubuk
Bumbu halus:
- 6 siung bawang merah
- 4 siung bawang putih
- 1/2 sdt ketumbar bubuk
- 2 cm lengkuas
- 2 sdm minyak
Cara membuat emapl daging kelapa:
- Tumis bumbu halus hingga harum, sisihkan.
- Rebus daging yang sudah matang dan disuwir-suwir bersama air kelapa, bumbu halus dan bumbu lainnya kecuali kelapa hingga bumbu meresap dan air susut.
- Masukan kelapa parut, aduk rata. Dan masak di api kecil hingga kelapa garing. Siap disajikan!

- 2 cm galangal
- 2 tbsp oil
How to make coconut meat empal:
- Saute the ground spices until fragrant, set aside.
- Boil the cooked and shredded meat with coconut water, fine spices and other spices except coconut until the spices are absorbed and the water reduces.
